Juan grew up in the kitchen of his parent's Northern Jersey Peruvian restaurants where he learned the family's long-held recipes. After refining his craft at the Culinary Institute of America and in the kitchens of NYC restaurants, he opened his acclaimed  Peruvian restaurant Costanera in Montclair, NJ, followed by Somos in North Arlington, NJ. With Brazas, Juan brings his love of  Peruvian chicken and other authentic flavors to Philadelphia.
